Ratatouille is a Mediterranean dish from Provence with a definite Italian influence. It is usually a stew of tomatoes, eggplant, and squash, with endless variations, this dish gets its distinctive flavor from the slow cooking. Serve as a vegetable or a sauce for pasta.
Grace claims she ate some of the bread and tried the "soup" from yesterday's lunch. Drop-off yesterday was good. Steve did the drop-off and Grace was repeating to herself "Don't cry, don't cry, don't cry" on the way there, which is heartbreaking. But. . .she didn't cry. When she got home from school, she told me she didn't cry all day because she didn't miss her Momma and Dadda. We are very proud of her for being so brave.
